apple pie bread

I whipped this up some time ago and it was SO VERY YUMMY.  With it being apple season and all, I thought you might like to try it as well.

apple pie bread

You won’t regret it.  The printable recipe is below.

Apple Pie Bread

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1/4 cup buttermilk
  • 2 teaspoons baking powder
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 cups shredded, peeled apple (about 4 medium)
  • 1 cup chopped walnuts or pecans
  • 1/2 cup raisins
  • 1 recipe Streusel-Nut Topping [below]

  1. Preheat oven to 350 degrees. Grease bottom and 1/2-inch up the sides of a 9x5x3-inch loaf pan; set aside.
  2. In a large bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Beat in sugar until combined. Add buttermilk and baking powder; beat until combined. Add eggs and vanilla; beat until combined. Add flour and salt; beat until combined. Stir in apples, nuts, and raisins.
  3. Spoon batter into prepared pan; spread evenly. Sprinkle Streusel-Nut Topping over batter. [Streusel-Nut Topping: In a small bowl, stir together 1/4 cup packed brown sugar and 3 Tablespoons all-purpose flour. Cut in 3 Tablespoons butter until mixture resembles coarse crumbs. Stir in 1/3 cup chopped walnuts or pecans.] Bake for 60-65 minutes or until wooden toothpick inserted near the center comes out clean.
  4. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack. Wrap and store overnight before slicing. Makes 1 loaf.

alison | minnesota senior portrait photographer

This is Alison. We met a few weeks ago when she, her mom, and sister made the trek out to my home in Rosemount for a stunning high school senior portrait session.

The weather was beeeeautiful with just enough wind to add a little spark to the images.

As fun as it was for me, Alison had her hands full.  🙂

For the last couple of years, I have been dying to use one of the local flower fields as a session backdrop.  It seemed the flowers were always gone by the time a senior girl was in my midst.  But not this time.

And wouldn’t you know?   Alison had THE PERFECT top for it [totally unplanned] – a sure sign that SHE was meant to bring this image to life:

LOVE IT!   Here are several more from our time together:

Have a wonderful senior year, Alison!!!

Our oldest turned 15 today. He takes his permit test next month and soon will be DRIVING.

Happy 15th Birthday, Emilio!!!

Wow! It is crazy that 15 years has gone by so fast! Just as the pictures here show, Emilio has always been adorable (from a totally unbiased auntie), but he’s become such a handsome young man.

everyday family session | lakeville, minnesota photographer

I recently had the opportunity to photograph a very special family gathering. The kind that only happens once or twice a year. Siblings, spouses, grandparents, aunts, uncles, friends…

From different parts of Wisconsin. And Florida. [And, of course, Minnesota!] It’s not always easy for EVERYONE to gather in one place. At the very same time.

When Caarin contacted me about the session, it sounded like the perfect backdrop for an Everyday Session.

And that it was.  I simply hung back and watched them reconnect.

And enjoy a meal together.

Here are several more of my favorites from the day:

Things I will remember about this day:

– the icing pranks and your refrigerator is running
– the flower crown that even I got to wear 🙂
– the seemingly effortless way in which the family pulled this picnic together (everyone had a role and played it well)
– Charlee and Coltrane… TOTAL sweetness
– watching the little “princess” and her auntie… they had a special, special connection
– the silliness with Grandpa
– hearing that the pictures I took of Grandma with her brother and Grandpa with his sister were THE VERY FIRST taken together in a long, long time

This day and these moments will be treasured.  Thank you SO VERY MUCH for allowing me to capture your day!
