the perfect summer salsa

Though not your typical salsa. The main ingredient: strawberries.

Best served with lime-flavored tortilla chips. The recipe is below.

Strawberry Avocado Salsa

Ingredients

  • 2 cups finely chopped strawberries (approx. 1 pint)
  • 1/2 cup finely chopped, peeled avocado (approx. 1/2 of avocado)
  • 4 Tablespoons finely chopped red onion
  • 4 Tablespoons chopped, fresh cilantro
  • 1 teaspoon lime zest
  • 4 Tablespoons fresh lime juice (1 lime is sufficient for both the juice & zest)
  • 4 teaspoons finely chopped, seeded jalapeno (leave the seeds in for more heat)
  • 1/4 teaspoon sugar or Stevia equivilant

Instructions

  1. Chop and mix all ingredients. Serve immediately with lime tortilla chips.

family vacation :: key lime cove resort & six flags great america

This wasn’t our first trip to Gurnee, Illinois.  The first took place four years ago and the boys have wanted to go back ever since!

Who am I kidding?  I wanted to go back for the candy counter at the Key Lime Cove Resort alone!  This time… it was right down the hall from our room.  Dangerous.  Very, very dangerous.  Oh and there’s a mini Starbucks on site.  Along with an arcade and several places to dine.

And drink. :)  What made this trip unique were the friends that decided to join us in the merriment.

I absolutely love the tropical style of the resort. It is even reflected in the rooms:

The indoor waterpark at the resort has a several killer slides (including the “Toilet Bowl” which I seemed to get stuck in every time), a lazy river, and many other areas we never had a chance to explore. In addition to taking a day at the waterpark, we also purchased discounted tickets to Six Flags Great America through the resort when we booked our trip – which was the highlight for our boys.

[BTW, Tilly snapped the upper left corner ride and full carousel iPhone pics above.]  Key Lime even shuttles you back and forth to Six Flags at no extra cost!

Our friends had to head home before us so we spent our last full day just hanging out as a family at the Gurnee Mills Mall.

Which seemed to have grown substantially since our last visit!

It was a fun, fun trip we are sure to do again… perhaps with even more friends next time. :)
