spinach & artichoke grilled cheese sandwich

When I stumbled upon THIS RECIPE from Joy the Baker, I knew it would make for the perfect vegetarian companion to my traditional pickle sub served at the workshop last weekend.

And it was.  Not only that, I ended up making it again only two days later to share with my husband.

It’s THAT GOOD.  I tweaked it just a tiny bit from the original recipe, using Kraft Philadelphia Spicy Jalapeño Cream Cheese as my “edible glue” and omitting the Sriracha sauce.
